Running a Mexican restaurant must be a lot of fun; you get to inspire with your own take on classic dishes, people love margaritas, and it's an overall "fun" vibe. Food costs are generally on low side, so it makes it easier to stay afloat, as well.

One of Northern Colorado's legendary Mexican restaurants suffered a kitchen fire in its 35th year in business.

You could stop 10 people on the streets of Northern Colorado and ask them what their favorite Mexican spot is in the area and you'd probably get 10 different responses. I think many folks find a place they like, and latch on to it, like the restaurant is a part of the family.

Saying that a restaurant is "legendary" is a bit arbitrary. There are great Mexican restaurants all around Northern Colorado that deserve our business and our love; highlighting only five seems like a very small sample size, but it fits into Cinco de Mayo so nicely, it was hard to resist the number.

These five places that I've put together are five that have been around a long time in the area; It's an "If you know, you know" kind of thing. I think you'll look a the list and say, "Yes! They ARE legendary!" You may not stop in on a regular basis, but you respect their longevity.
