It's somewhat surprising how life can work out sometimes. Last week, I was searching for a specific cut of cured meat that is not readily available in Colorado. This Italian meat is known as guiancale and is made from pork cheek.

In the past, I have had to drive all the way down to the Denver Metro area to get some, and it's not cheap either. Before heading to my usual Italian deli to pick some guiancale up for a dish, I decided to search online to see if I could find somewhere that was a little more accessible.

A Hidden Gem in Longmont

Luckily, I found a place that many still consider to be in Northern Colorado. Tucked away in a warehouse, you wouldn't know there is a hidden gem located off Highway 119 in Longmont.

Cordobes Foods opened for business in January 2024, and is ran by an amazing family that has a long-standing tradition of butchers in the family for seven generations. When walking into the showroom, I was blown away by how clean and organized the facility was.

You can also find pork, lamb, poultry, seafood, chicken, and even frog legs at Cordobes Foods in Longmont. They also painstakingly make some of the most delicious-looking sausages I think I have ever seen in my life right in the facility in Longmont.
